Tray-Passed Hors d’Oeuvres:
Teriyaki Salmon Tacos, with wasabi tobikko, micro cilantro
Balsamic Glazed Crimini Mushroom Skewers, w grape tomato, fresh mozzarella & basil
Sesame Seared Ahi on Wonton Crisps, wasabi sauce, micro cilantro
Stilton and Pear Tarts in phyllo dough

Fruit & Cheese Display:
Gorgonzola, Goat, Pepper Jack and Brie Cheeses Surrounded by Seedless Red Grapes, Fresh Strawberries, and Sliced Melon Accompanied by Sliced French Baguettes and Assorted Crackers

Kitchen Cocktails:
(served in miniature plastic martini glasses)
Marinated steak with mango, edamame, jicama, citrus dressing.
Blackened Tuna, with papaya-cucumber relish, crispy ginger.
Shredded Smoked Chicken, with apple, slaw, citrus dressing.

Marinated Olives, Olive Dip, Cilantro Hummus and Pita, Dates and Apricots, Spicy Red Pepper Spread, Smoked Eggplant, and Tomato Salad

Plated Salad:
Arugula, radicchio, candied pecans, gorgonzola, honey walnut vinaigrette

Main Dish:
Hanging Tender Steak, and Grilled Chicken (dual-entrée)
Caramelized fennel-pineapple relish, root vegetable puree, cardamom glazed baby carrots
